Feteer Mesheltat Recipe

This delicious Egyptian delicacy is a staple in Egyptian households. This croissant-like pastry can be eaten with any dip, cheese, or topping of your liking.

The steps will be broken out into sections to help you easily follow along.

– 4 cups all purpose flour
– 2 tablespoons sugar
– 1 tablespoon salt
– Water (as much as needed – I used almost 1 1/2 cups)
– 1-2 cups of vegetable oil
-1.5 – 2 cups of butter

1. Mix all the dry ingredients in a stand mixer or by hand.
2. Slowly add water until the dough stops sticking to the side of the bowl.
3. Once the dough is soft, roll it on your kitchen surface into a log then cut the log into 5 even pieces.
4. Roll those 5 pieces into balls
5. Fully cover these balls in oil until completely submerged and set aside to rest for 30 minutes – 2 hours maximum
6. Melt the butter and put it near your work station.
7. Oil the surface you are working in and start stretching the dough out super paper thin until you can see the surface under (do not worry about tearing along the way).
7. Spread the butter on the pieces of spread out dough and fold the dough as shown in the tiktok video. This step will make more sense visually. Keep adding butter with every fold.
8. Repeat step 4 for for all 5 pieces of dough. For each new piece of dough you should fold the previous piece into the square. I prefer to fold in dough ball 1 into dough ball 2 and then start all over again with the other 3 dough balls in order to make 1 small size feteer and 1 medium size feteer.
9. Take all the corners of the bread and form a circle.
10. Spread the ball on a small – medium size pan lightly then add more butter on top. Let this rest for about 15 minutes.
11. Preheat the oven to 550 degrees for about 10 minutes then put your feteer in there for about 10 minutes. Feel free to turn the broiler on if the top does not brown after the 10 minutes.
12. Take the feteer out of the oven and spread some more butter on it and quickly wrap the feteer in a piece of foil from all ends to lock in the moisture and to make sure your feteer comes out very soft and moist.
