Brown Butter Date Filled Cinnamon Rolls

Brown butter date filled cinnamon roll recipe! (date paste/agwa recipe in separate post)

Ingredients for the dough:

  • 2/3 cup warm milk
  • 2 teaspoons instant bread yeast
  • 1 egg + 1 yolk
  • 3 tablespoons melted butter
  • 3/4 cup sugar
  • 3 1/4 cups bread flour (not all purpose!)
  • 1 teaspoon salt
  • tablespoon of neutral oil (for when dough rises)

Ingredients for the filling:

  • 1 cup agwa (date paste – separate post can be found here)
  • 1.5 cups brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon salt
  • 8 tablespoons softened butter

Ingredients for brown butter date frosting:

  • 4 tablespoons softened brown butter
  • 6 ounces cream cheese
  • 1 1/2 – 2 cups powdered sugar (or more depending on desired thickness)
  • splash of vanilla
  • pinch of salt

Steps for dough:

Warm your milk and add it to a bowl along with your yeast and let it set aside for about 10-15 minutes or until the yeast begins to froth. Add in the rest of the dough ingredients listed above except the flour and mix until combined. Once combined, add in the flour. Cover the dough with  oil and let it rest for 1 – 1.5 hours until the dough doubles in size. 

steps for making the filling: 

Mix your brown sugar, cinnamon, ginger, cinnamon, cardamom, salt all together then mix in the softened butter until this becomes a paste like texture. The agwa (date paste) video is in a separate tiktok if you want to add that in. 

steps for making the frosting:

Mix your softened brown butter, cream cheese, vanilla, salt, and desired powdered sugar in order to create your frosting. I recommend using a stand mixer to get an icing consistency. 

Bring it all together:

Roll out your dough until it’s in a big square shape then spread on your brown sugar butter mixture. Then roll out your agwa date paste onto the center section of the dough. Tip: use a gallon sized plastic bag in order to spread out the agwa inside of it into a paper thin piece. roll the dough all together and cut into pieces. Leave the dough to set for another 30 minutes then bake at 350 for 20-25 minutes until the tops are golden brown. Add the frosting while the cinnamon roll is still hot so it melts all over your roll.
